1 can tuna fish in water, drained 1 1/2 Tbsp. extra virgin olive oil 3/4 cup thinly sliced sweet onion

1 can cannelini beans, drained 1 - 2 Tbsp. red wine vinegar salt & freshly ground pepper to taste

Open one can of cannellini beans (15 or 20 oz.), drain them, and put them in a medium bowl. Thinly slice 3/4 cup extra sweet onion and add it to the beans.
Add 1 1/2 Tbsp. extra virgin olive oil and 1 to 2 Tbsp. good red wine vinegar, depending on your taste, and mix. Add salt and plenty of freshly ground pepper.
Open one can of water packed albacore tuna and drain it. Add to the bean mixture. Mix and serve.
Serve plain (or on lettuce with tomato chunks). SERVES 2, or maybe 3, people.
