Bake one medium to large sweet potato (you may call them "YAMS") wrapped in foil in oven at 375 degrees until done. Cool.
Peel. You can also use boiled -- or canned drained -- sweet potatoes mashed, but they won't be as sweet.
Take one cup mashed sweet potatoes with NO seasonings, and
add enough low fat bisquick to make a "normal" biscuit dough. Follow directions on
the bisquick box for kneeding and baking.
You can use a biscuit cutter or make drop biscuits,
and they'll be good either way. You can also roll the dough and cut these to burger size and use them for
buns for veggie burgers: They're great!
