VERSION ONE:
1# can salmon: juice, bones and all 3/4 - 1 cup bread crumbs 2 egg whites, slightly beaten 1 Tbsp. dry butter buds
3 tsp. Fresh lemon juice 2 dashes Tabasco 1/4 cup finely chopped parsley Salt & freshly ground pepper to taste
Mix all together and put in oiled loaf pan. Bake at 375 degrees for 40 - 50 minutes. Let sit 10 minutes before cutting.
SERVES 4.

VERSION TWO:
1# can salmon: juice, bones and all 4 - 5 pieces whole wheat bread made into fine crumbs
2 eggs 2 Tbsp. dry butter buds 2 Tbsp. Fresh lemon juice 2 dashes Tabasco 1/4 cup finely chopped cilantro
1 can black beans, drained about half 1 Tbsp. finely chopped garlic 1/2 cup finely chopped onion Freshly ground pepper to taste
Put eggs, butter buds, lemon juice and black beans into food processor and blend well. Add garlic, onion and cilantro and blend.
Dump salmon into large bowl and flake well. Add bean mixture, then bread crumbs, and stir well.
This will be very "wet"!
Put in well oiled large loaf pan. Bake at 325 degrees for 60 - 75 minutes. Let sit 15 minutes before cutting to firm up,
or it won't come out of the pan well at all!

Of course, it would also be good with mushroom slices sautéed in butter mixed in with a can of drained green beans.
