2 whole wheat tortillas 4 oz. low fat cream cheese 2 Tbsp. low fat mayonnaise
2 tsp. Grey Poupon mustard 1 Tbsp. lowfat milk

2 roasted red or yellow peppers, chopped or sliced
1/4 cup extra sweet onion chopped 2 - 3 Tbsp. capers, drained 4 oz. smoked salmon or lox

Mix thoroughly the cream cheese, lowfat mayonnaise, mustard and milk.
Spread evenly on the tortillas. On one half of each tortilla arrange thinly cut lox or smoked salmon slices or bits, chopped extra sweet onion, chopped roasted pepper (red or yellow), and capers.
(If you truly hate capers you might substitute sliced green olives, but the taste will not be as good.)
Fold over and grill in sprayed pan over medium low heat until VERY light brown.
Cover to help cheese melt. Lightly spray tops, then flip over carefully and cook covered for a couple more minutes.
Do not let tortillas become too brown or they will be too crisp. SERVES 2.
