SALAD FOR TWO

Vegetarian main course salad

3 cups EACH:
mixed baby greens
romain lettuce
1/2 c. thinly sliced sweet onion
1/2 pkg veggie peperoni slices
2 slices veggie provolone cut in strips
red and green pepper strips

1 large tomato cut in chunks
3 oz. sliced fresh mushrooms
1/4 cup roasted soy nuts
2 oz. feta cheese crumbled
8 sliced black greek olives
Oil, vinegar, salt & pepper

Lightly salt greens in large bowl & add freshly ground pepper: sprinkle with 1 Tbsp extra virgin olive oil and toss well. Then sprinkle with 2 Tbsp. Red wine vinegar and toss again. Put into two large pasta bowls and arrange remaining goodies on top.

Serve with hot crusty multi-grain French bread or my SWEET POTATO BISCUITS.
