BLACK BEANS AND RICE WITH SALSA Easy vegetarian black bean recipe
16 oz. can black beans, drained 1 1/2 cups cooked rice (preferably brown rice)	3/4 cup chunky salsa 1 Tbs. chopped fresh cilantro
Use your favorite chunky tomato based salsa: For this recipe it is probably best to not use a really "hot" version. Mild or medium will work best. Try white corn and black bean salsa -- it goes well with this particular combination of ingredients. Adjust the amount of fresh cilantro to your individual preference. In non stick skillet, combine all ingredients and heat through. Add a bit more salsa if it looks too dry. Heat through, stirring, and serve. Totally simple! Totally good! Add a tossed salad and a light dessert for a truly healthy and really quick meal. SERVES 3. You can add a little fat free or low fat sour cream if you wish, either on top or on the side. It's your tummy -- keep it happy and healthy!
