"CHINESE" BEET SALAD

Better than pickled beets!

3 cans sliced beets (or 6 cups fresh, cooked and sliced)
1 1/2 cups beet liquid
2 Tbsp cornstarch
3/4 cup sugar

1 cup vinegar
1 tsp vanilla
3 Tbsp catsup
24 whole cloves

Put all of above in pan and cook until it starts to thicken. Add 1 cup thinly sliced onions and cook over low heat 2 minutes. Remove from heat and add 4 - 6 Tbsp. good strong grated horseradish and a dash of salt. Chill at least 4 hours.

This makes a very large quantity. You can make half a recipe if you wish. It goes well with any kind of main course that does not have tomatoes or tomato sauce. Try my CREAMED EGGS AND MUSHROOMS, and ENGLISH MUFFIN BREAD, toasted, with it for a delicious brunch.
